Financial calculations were carried out which were then used to assess the viability to build a dedicated catering and retail venue. Replacing the existing "hut" with a solid construction would not only enhance the overall customer experience (especially during less-good weather days!) but would also provide an opportunity to extend the business season.
Detailed five-year financial projections were developed and an action plan outlined all the key areas for getting the new project off the ground. We advised amongst other issues on layout planning for the kitchen, customer seating and service area, and operating equipment etc. We participated in talks with kitchen contractors and also advised on staffing and logistical matters.
The new facilities opened for the 2006 season and they were an instant success. VisitScotland grading changed from a three to a four star operation and CFF has been put forward for the 2007 Thistle Awards. Turnover exceeded the initial estimates by more than double and CFF is currently contemplating extending its facilities.
